On Putting Pasta in its Place

LET me propose that you start cooking pasta in a way that might make you the laughingstock of your foodie friends: make more sauce, and serve it on top of less pasta. Do exactly what you’ve learned not to do.

Talk about the blinding bolt of clarity: of course! Pasta as an accouterment not as the dominator! Who knew?

There are many routes to a more healthy diet, but few are as simple as this one.
